Sauce:
Juice from 1 lime
4 minced garlic cloves
1 tbsp minced ginger
1/2 cup coconut aminos
1 tsp fish sauce
1 tbsp rice vinegar
1 tsp toasted sesame oil
2 tbsp peanut butter
1 tbsp honey
Siracha to taste
Noodles:
1lb ground beef
1 cup sliced mushrooms
2 heads of chopped baby bok choy
1/2 cup diced onion
1 package rice noodles (pick whatever noodle you want)
Note: You can add whatever ingredients you want! Go crazy with all the veggies that are going to go. bad in your fridge, promise it’ll taste fine.
Directions:
Prepare the Noodles: Soak the rice noodles in warm water for at least 10 minutes. After soaking, drain and set aside.
Make the Sauce: Combine all sauce ingredients in a saucepan and mix well. Let the mixture simmer for 5 minutes, then remove from heat and set aside.
Cook the Onion: In a large skillet over medium heat, sauté the onion until it becomes slightly tender.
Cook the Beef: Add the ground beef to the skillet, breaking it into small pieces. Cook until the beef is no longer pink. Depending on the fat content of the beef, you may need to drain excess fat.
Add Vegetables: Stir in the mushrooms and bok choy, cooking until they begin to soften.
Combine with Noodles: Add the drained rice noodles to the skillet and toss well to combine.
Add Sauce and Finish: Stir in the prepared sauce to taste. Continue to cook until the noodles are done to your preference. Once the noodles are ready, the dish is ready to serve. Enjoy!
